Fenugreek is a yearly plant in the family Fabaceae, with leaves existing three small ovates to plane figure leaflets. It is cultivated world-wide as a semiarid crop. Its seeds are the common ingredients in recipes from South Asia. Fenugreek is used as the spice (seeds), herb (dried or fresh leaves) and vegetable (sprouts, fresh leaves and micro-greens) it has a chemical named as Sotolon that is responsible for its typical sweet smell. Naturally sun dried leaves and powders retain their required flavor, taste, color and nutritional values. Methi leaves are small and green and usually added to various cooked dishes. The leaves are packed with calcium, phosphorus and iron. Dried Fenugreek is also used in traditional medications, it is thought to boost digestion, bring on labor, and cut down the blood sugar levels in diabetics.
